The aroma of Chai tea is mesmerizing. A perfect beverage for the holiday season and those cold winter nights. Chai tea makes a wonderful bread too.

Bread flour | 1 1/2 - 2 cups | 360 - 480 ml |
Milk powder | 1/4 cup | 60 ml |
Salt | 1/2 teaspoon | 2.5 ml |
Sugar | 1/2 cup | 120 ml |
Egg ( beaten ) | 1 | 1 |
Butter | 1/4 cup | 60 ml |
Chai tea | 1/2 cup | 120 ml |
instant yeast | 1 teaspoon | 5 ml |
Directions
Place all the night before ingredients
into a bowl and mix till smooth. Cover with plastic wrap and allow to
sit for 1 hour, then place into the fridge for 12 - 16 hours.
Next day remove the dough and allow to
sit for 1 - 2 hours on the counter. In a separate bowl add the butter,
powder milk, egg, sugar, salt and mix together. Add in the warm Chai tea
and mix.
Remove the "day before" dough and cut into small pieces. Mixed into the bowl with the Chai tea mixture. Mix with a wooden spoon.
Add in the instant yeast and mix. Start to add in the flour, about a 1/2 cup at a time.
When the dough becomes to hard to mix in
the bowl, sprinkle a little flour onto a flat surface and begin to
knead the dough. Adding more flour as needed till you have a smooth and
elastic dough ( about 10 - 15 minutes ). Place the dough into a lightly
oiled bowl. Turn the dough over a few times till all the dough is
lightly coated with the oil. Allow to rest till double in size or about 1
hour.
Remove dough from bowl and deflate the
gas from the dough. Cut the dough into 6 equal pieces. I like to use a
scale to be sure each piece weighs the same.
Place 3 pieces of dough into the 2
lightly greased loaf pans. Cover with plastic wrap and allow to sit till
the dough has risen to double it's size. Sprinkle some flour ontop of
the dough. Bake in a preheated 350F or 176C for about 30 - 35 minutes.
Remove from oven and remove from the loaf pans and place onto a wire
rack to cool.
