It's made from high-protein/fiber flax seed meal, which can be found in the baking aisle of most well-stocked grocery stores. Make sure you buy the flax seed meal though, and not the whole seeds.
Ingredients
5 eggs (if you use jumbo-sized eggs, only use 4)1/3 cup extra virgin olive oil
1/2 cup water
2 cups flax seed meal
1 tbsp baking powder
1 tsp salt
Directions
Preheat oven to 350 degrees F. Line a 9 1/2" x 11* or other large baking pan with parchment paper or a silicone baking mat.In a mixing bowl, beat eggs, oil and water together until light and fluffy (1-2 minutes). Add the flax seed meal, baking powder and salt and stir just until well-combined. Let sit to thicken for 3 minutes.
Scrape batter into the center of the prepared pan and let it spread out (it likely won't reach the edges).
Bake for 18-20 minutes, until the top of the bread springs back when touched.
Let cool before cutting into squares (or whatever shape you want.
Serves 4-6.
